1½ cups flour
¼ teaspoon salt
2 teaspoons baking powder
½ cup sugar
¼ cup butter
1 egg
⅔ cup milk
½ teaspoon vanilla
Streusel
2 Tablespoons flour
2 tablespoons butter
5 tablespoons sugar
Blend these ingredients until they crumble
Add ½ teaspoon cinnamon
¼ to ½ chopped nuts optional

Heat oven to 375 degrees
Sift the flour before measuring. Resift with salt and baking powder
Sift the sugar, cream the butter
Add the sugar gradually to the butter until light in color
Beat in the egg and milk
Add the sifted ingredients to butter mixture until smooth, add vanilla
Cover with streusel, bake for 25 min. in a greased pan 9 X 9 pan.

McKinney favorite coffee cake recipe from The Joy of Cooking book. The page in the cookbook is covered with flour, sugar, butter. Cookbook was a wedding gift 50 yrs. ago. Granny liked to put jam in the middle or layer with cinnamon, topping with sugar/nuts.
I recommend this treat for the family breakfast. Please fight over that precious cookbook when I am gone. Just look for the page with the butter and sugar.
