4 skin off cod fillets. (about 10cm each)
1 cup white bread crumbs (use fresh bread in blender)
Hand full of parsley, dill, basil, and chives.
1/2 cup grated parmesan
Salt and pepper.

1 tbsp Dijon mustard.

2 rachers smoked bacon.
1 large shallot or 1/2 onion finely chopped.
1 tin red kidney beans
1 tin butter beans
1 tin chick peas
1 tbsp tomato puree
1 clove garlic
1 tsp olive oil
1 tbsp balsamic vinegar

Pre heat the oven to 180 degrees
Add the bread, cheese, herbs to a mixer and blitz well until fine. Season the mix.
brush one side of the fish with Dijon mustard and press down the crumb mixture.
Place the fish on a baking sheet.
cook in the oven for 18-20 mins.


In a large heavy based pan on medium add the oil.
Add bacon, onion and garlic and cook for 3 mins.
Add the drained red kidney beans.
Add the chick peas and butter beans inc liquid. cook for 5 mins
Add the tomato puree and cook for 2 mins
Add the vinegar.
Simmer for 5 to 7 mins until the liquid thickens.
Add parsley before serving.

Cooked this out of desperation as I did not have much in the fridge at the time. I have now made this 4-5 times and its easy and very tasty.
