4 (8 oz.) packages cream cheese, softened
4 eggs
1 3/4 c. sugar
1 t. vanilla
1 t. lemon juice
1/2 c. crushed graham crackers
butter or margarine for greasing pan

Directions:
Directions:
Mix first five ingredients until smooth. Grease springform pan with butter or margarine, and dust with graham cracker crumbs. (You can save some of the crumbs to sprinkle on top). Pour cream cheese mixture into pan. Put the pan in a pan of water (about 1 inch deep). Bake at 325º for 1 1/2 hours. Leave cake in the oven until cool.

A springform (cheesecake) pan works best for this, but be sure the pan is watertight. If not, wrap the outside of the pan with foil.
