Cheddar Ranch Chicken Recipe

Cheddar Chicken:
4 chicken breasts (thin)
1/2 cup of Mayo
1 cup of Cheddar Cheese
2 tbs Garlic
1 packet of Ranch
1/2 box of pasta of choice
1 head of broccoli

For Pasta Sauce:
2 Tbs Butter
1 Tbs Garlic
2 cups Milk
2 Tbs Flour
3/4 cup of Shredded or Grated Parmesan

Served on top of pasta with a light butter sauce. Add roasted broccoli for a side.

Preheat oven to 400º
You will need:
-medium pan
-glass casserole dish
-medium mixing bowl
-large pot for pasta
-skillet with sides

Add pasta to boiling water and cook according to instructions on box. I chose to make rotini pasta.

While pasta cooks, melt butter in a large skillet. Add garlic and sauté for 1 minute. Add flour and begin stirring for about 30 seconds. Add milk slowly, and consistently stir so as not to burn the garlic. Once sauce begins to thicken, add parmesan. Reduce to simmer and occasionally stir while you wait for pasta to finish cooking.

Prepare broccoli for roasting on a small pan, with a little olive oil, salt and pepper. Set pan aside.

In a medium mixing bowl, add Mayo, Cheddar, Ranch, and garlic in a bowl.

Once pasta is finished cooking, strain and add to the butter sauce. Stir, and add to a glass baking dish. Place chicken breasts on top of pasta, and top with cheddar mixture.

Place broccoli on the top rack of the oven, and the chicken on a rack below. Cook for 30 minutes, periodically checking broccoli and removing when it is cooked to your liking. After 30 minutes, turn the temperature up to broil and wait for cheese to brown.

Serve and enjoy!!
