3 eggs
2 cups sugar
1 cup salad oil
1 T vanilla
2 cups zucchini
3 cups flour, sifted
2 t cinnamon
1 t baking soda
1/4 t baking powder
1 t salt
1 cup nuts, chopped (optional)

Directions:
Directions:
Beat eggs until frothy, beat in sugar, oil and vanilla.
Beat until thick and lemon colored.
Stir in grated zucchini, flour, baking soda, salt, baking powder, & cinnamon.
1 cup of chopped nuts may be folded in at this point, but it's just as good plain.
Use oiled and floured pans.
Bake approximately 1 hour at 350 degrees

Makes 2 loaves of bread.
