3-4 lb boneless skinless chicken thighs

Marinade
3 large garlic cloves, minced
3 tsp white wine vinegar
3 Tbsp lemon juice
1 tbsp extra virgin olive oil
3 tbsp Greek yogurt
1 ½ tbsp dried oregano
1 tsp salt
black pepper

Tzatziki
½ cups grated cucumber, juice squeezed out (about 2 small cucumbers)
1 ¼ cups plain greek yogurt
2 tsp white wine vinegar
1 tbsp lemon juice
1 tbsp extra virgin olive oil
1 garlic clove, minced
½ tsp salt
black pepper

Salad
2 tomatoes, diced
2 cucumbers, diced
½ red onion, sliced
2 tsp vegetable oil
salt

Naan bread for serving

Directions:
1. Place the marinade ingredients in a ziplock bag and massage to mix. Add the chicken to the ziplock bag and massage to cover all the chicken in the marinade. Marinate for at least 2 hours, ideally 12. (It will smell so good, you will want to take a bite right now. So. so good.)

Tzatziki

1. Grate the cucumbers coarsely. Place in a paper towel or a cheesecloth and squeeze to remove the juice. (Try to use small cucumbers, or english cucumbers. If you use the large cucumbers, you'll need to remove the seeds before grating. Too watery)

2. Combine the cucumber and the rest of the tzatziki sauce ingredients. Let sit for at least 20 minutes before serving.

Salad

1. Combine all ingredients. Salt to taste.

Chicken
1. Grill chicken on an outdoor grill, 3-5 minutes per side until golden brown and cooked through.
2. Let sit for at least 5 minutes. Chop into 1-inch size pieces

To serve:
Warm Naan bread in 350º oven for about 3 minutes, until soft and fragrant. Cut into quarter sized pieces.

Place chicken and salad on a naan piece and top with tzaziki sauce.

This is a recipe I stumbled upon on a blog site years ago. Since then, it has become a summertime favorite. It's a GREAT recipe for company. The ingredient list looks intimidating, but most of the ingredients are used several times. If you were to try just one of my recipes, this is the one I would choose. So so good.
