2 Eggs beaten
2 Tablespoons salad oil
1 Cup finely shreeded, or diced carrot strings
Ham, pork or beef (optional)
6 Green onions including topps thinly sliced or chopped
4 Cups cold cooked rice
2 Tablespoons soy sauce
1/2 teaspoon sugar
salt if needed

Method 2
Sauce rice in oil over medium heat about 15 minutes, or until it is golden brown. Add meat if desired. Pour beaten egg over rice. Cook, stirring often, until the egg is set. Sprinkle with the carrots and soy sauce mixed with the sugar and salt if needed. Stir just until blended.

Method 1
Fry beaten egg until firm in the oil, remove from heat, and cut into shreds. Return egg into frying pan with meat (cut into shreds to match egg). Add onion. Cook over medium heat, stirring constantly, for 3 or 4 minutes. Add the ric, mix in the soy sauce, sugar, and salt if desired over the rice. Stir until rice is hoy.
