Can leave out cocoa to make plain. Can add coffee essence if coffee cake requires.

Pour into 2 sandwich cake tins

Bake in oven preheated to 180 C for 20 mins until ready

Ice with chicolate butter icing OR

Jam and dusted with icing sugar if victorian sponge cake OR

Coffee butter icing if coffee sponge required

As kids used to bake this regularly in afternoon to have something sweet for tea. I can remember aged about 6 going to ask Mum (having afternoon nap) what sug was in her recipe book (written as sug short for sugar).

Michael many years later also very young rewrote recipe in book under title ‘Chotty Cake’. Since always known as Mike’s Chotty Cake.
