2 x medium sized aubergines cut into thick slices.
2 handfuls of cherry tomatoes
3 cloves of garlic crushed
1 chilli -Cut chilli in half and remove seeds and slice thickly.
1 thyme,sprig
1glug olive oil
seasoning

Directions:
Directions:
Oven 200ºC
Wipe Aubergines and cut into thick slices. Put into a roasting tin with olive oil add the halved cherry tomatoes, crushed garlic and thyme.
Cut chilli in half and slice thickly and put over the aubergine.
Add the thyme and olive oil and salt and pepper and bake for 40-50 minutes or until cooked.
