One-Bowl Lemon Brownies Recipe

1 c. all-purpose flour
3/4 c. sugar
1/4 t. salt
1/4 t. baking soda
2 eggs
1/4 c. lowfat plain yogurt or sour cream
3 Tbsp. oil
2 Tbsp. fresh squeezed lemon juice
1 Tbsp. or more fresh Lemon Zest (grated lemon peel) (zest of 2 lemons)

FOR GLAZE:
1 heaping c. confectioner's sugar
Fresh zest of 1 lemon
2-4 Tablespoons lemon juice


Directions:
Directions:
1. Preheat oven 350º. Line an 8x8' square baking pan with parchment paper.
2. Put all ingredients in one bowl and stir until smooth. Pour into pan. Bake 20 minutes.
3. While brownies are baking, mix glaze, starting with confectioner's sugar and zest in bowl and add lemon juice slowly as you stir til it reaches glaze consistency. (Be careful not to add too much juice to make it too runny).
4. Take brownies out of oven and let sit about 10 minutes. Take brownies out of pan and then spread on glaze.
