2 C Sugar
1 1/2 C Oil
3 Eggs
2 C grated Carrots or 1 large of Carrot baby food
2 C grated Orange Rind
no 1 can crushed pineapple, drain a little juice and leave for frosting
1/2 C Coconut
1/2 C Nuts
2 1/2 C Flour
1 1/2 tsp Baking Soda
1/2 tsp Salt

Frosting:
2 1/2 C Powder Sugar
1/3 C Buter
small Cream Cheese (3 oz)
drop Vanilla
Juice from Pineapple, Orange

Directions:

Cake:
Beat sugar, eggs, oil. Add carrots, pineapple, nuts, coconut, orange rind, flour, baking soda & salt.
Stir with spoon or slow with electic mixer
Bake 350º for 40-45 minutes

Frosting:
mix all ingredients
