Ingredients:  
Saute in 1 Tbsp Olive Oil (about 5 minutes):
2 medium chopped Carrots
1/2 Cup chopped Bell Pepper
1/2 Cup chopped Celery
1/2 Cup chopped Onion

Add:
8 oz sliced Mushrooms
1 - 2 cloves minced Garlic

Cook until softened

Add:
1 Cup dried Lentils
1 28 oz can Crushed Tomato
2 Tbsp Tomato Paste
2 Cup Veggie Stock
1/4 Cup Balsamic Vinegar
1 Tbsp Italian Seasoning (oregano, basil, thyme, rosemary)
1/3 Cup fresh Basil

Bring to boil, then simmer 30-35 minutes, covered until Lentil are cooked.
