5 LBS Hamburger
5 teaspoons curing salt
1/2 to 2 teaspoons of ground red pepper
2 to 2 and 1/2 teaspoons of regular salt
1 to 2 teaspoons of liquid smoke
2 and 1/2 to 5 teaspoons of garlic salt
2 to 3 teaspoons of crushed whole black pepper
2 and 1/2 to 5 teaspoons of mustard seed

Mix well. Cover and refrigerate 24 hours.

Mix again and refrigerate another 24 hours.

Mix again and form into 5 rolls about 1 and 1/2 inch diameter. and make them as long as the width of the pan.

Place in pan and bake at 150 degrees for 8 hours.

After 4 hours of baking roll them over and drain grease.


(kay says she buys 3 LBS of the cheapest hamburger and mixes with 2 LBS of middle grade.)
