"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
1 lb lean Ground Beef
1 lb hot Italian Sausage
Pepperoni - amount is to your taste. I probably use a 2-3" high stack of fresh pepperoni and cut in to smaller pieces
1 onion, chopped
1 green pepper, chopped
3 celery ribs, diced
3 medium carrots, peeled and chopped
1 pkg sliced mushrooms, chopped or kept in slices
Garlic, 3-6 cloves (to your taste), minced (I like using the frozen cubes)
2 cans Italian herb seasoned chopped tomatoes
2 cans tomato sauce
1 can tomato paste
3/4 c red wine
1 can of black olives (olives sliced and juice from the olives goes in the sauce)
Beef Broth (probably 1-2 c depending on consistency of sauce)
2 T garlic powder
1 t garlic salt
1 t celery salt
1/2 t red pepper flakes (or to taste)
1 t paprika
1/2 t chili powder
1/2 t cayenne pepper
4 drops tabasco sauce
1 T dried thyme leaves
1 T dried rosemary leaves
1 T dried taragon leaves
1 T dried oregano leaves
1 T dried basil leaves
Italian Seasoning (to taste) - 1 - 2 T
Ground Anise, 1T or to taste
2-3 whole bay leaves
1 T sugar
salt and pepper to taste

Directions:
Directions:
Crumble and brown meats (I brown the ground beef first, drain it, and then brown the sausage and drain it)
Season the ground beef as you saute ( I use garlic salt, lawrys and pepper)
Saute onion and green pepper in pan while meats drain
Add mushrooms and saute
Add browned meat and pepperoni to pan and saute to 'cook' the pepperoni
Add garlic
Add remaining ingredients and simmer for at least a couple of hours (I like to cook the day before we have it; at least let it simmer for 1/2 day to blend the flavors)

Personal Notes:
I added extra spices, the celery and carrots from Grandma Maureen's spaghetti recipe. It really makes this sauce amazing!
