250 g butter
2 cups self-raising flour, sifted
1 cup sugar
375g mixed dried fruit
2 eggs
1 tsp vanilla essence
1 cup cooked mashed pumpkin

Directions:
Directions:
Cream butter and sugar well.
Add eggs one at a time, beating well after each addition.
Add mashed pumpkin and vanilla.
Add sifted flour, mix gently and then fold in fruit.
Spoon into a 20 cm square baking tin, which has been greased and the base lined with baking paper.
Bake at 160º C for about 50 minutes to an hour or until done.

This is an old fashioned light fruit cake that my family enjoys.

Instead of using Self raising flour, you can use plain flour but add 1 1/2 teaspoons baking powder per cup of plain flour.
