125g Butter
1 Cup Sugar
1 Egg
2 tsp Mixed Spice
1 tsp Cinnamon
2 Medium Apples
1¼ cups of plain flour
½ tsp Baking Soda
½ cup Sultanas
½ cup Walnuts chopped

Directions:
Directions:
Turn oven to 180 deg C
Melt butter, take off heat and stir in the sugar, egg and spices until evenly mixed.
Chop the unpeeled apples into pieces about size of sultanas or use food processor with metal blades in bursts.
Stir into the butter mixture.
Shake the flour and soda through a sieve, add sultanas and chopped walnuts, fold everything together.

Spray a 23cm ring tin or 20cm round tin with non stick spray and spoon in mixture evenly. Can line the bottom of pan with baking paper.

Bake ring pan for 30 mins and the round tin for 35 - 45mins or until skewer comes out clean.

Can dust with icing sugar.
