2 tbsp packed brown sugar
1 tsp paprika
1 tsp rosemary leaves, crushed
½ tsp garlic powder
½ tsp salt
1 pork tenderloin, about 1 lb
2 tbsp olive oil, divided
2 medium apples, cored & cut into thin wedges
1 medium onion, cut into thin wedges

* Preheat oven to 425º. Mix brown sugar and seasonings in large bowl. Reserve 1 tbsp.
* Brush tenderloin with 1 tbsp of oil. Sprinkle with remaining seasoning mixture. Place in center of large foil-lined shallow baking pan.
* Toss apples, onions and remaining 1 tbsp oil in medium bowl. Add reserved seasoning mixture; toss to coat well. Spread around pork in pan.
* Roast 25-30 minutes or until pork is desired done-ness. Slice pork and serve with apples and onions.

Can also be grilled. Follow recipe but place pork and apples in foil and seal. Get grill very hot and grill for about 45 mins.
