4 cups Broccoli, diced fine
1 cup Onions, diced fine
½ cup Carrots diced
½ cup Celery, diced
6 cups Milk *or 5 cups dry milk powder & 6 cups water
3 tablespoons Butter, unsalted

3 tablespoons White Flour
8 ounces Cheddar Cheese, *or Velveeta, diced into ½ inch cubes
1 teaspoon Garlic Powder
1 tablespoons Hot Sauce, *or 1 teaspoon of "Not 'Yo Mama" seasoning
Salt and Pepper to taste

Directions:
Directions:
Heat a large sauce pan over medium heat. Add butter, onions, and carrots. Cook until the onions are translucent. Add the flour and whisk to combine with the butter and veggies. Cook for one minute. Add the milk, garlic, and hot sauce and bring to a simmer. Once the sauce is at a simmer and fully thickened, add the broccoli then cheese, a few cubes at a time until all is fully melted and smooth. Taste, then add salt and pepper to your taste.
