Ingredients: 1-1/2 lbs lean ground beef 1 medium onion, chopped fine 4 cups medium cheddar cheese, grated 20 ounce can medium red chile enchilada sauce 12 large corn tortillas 3 cups finely shredded lettuce 2 large ripe tomatoes, sliced, and slices cut in half

Directions:Preheat oven to 350º
Brown the ground beef and onion in a large skillet until meat is done and onion is translucent. Set aside to cool.
In a small skillet heat vegetable oil until medium hot, but not too hot. Fry each tortilla 30 seconds on each side. They need to remain soft, do not let them get crispy at all. Drain tortillas on paper towels. Put half of the sauce in a shallow dish. Dip each tortilla in the sauce, then put 1/12th of the meat mixture in the middle of tortilla, sprinkle 1/4 grated cheddar cheese across the meat, roll up like an enchilada, place in a rectangultellar glass baking dish. Repeat with all 12 tortillas, until all meat mixture is used and one cup of cheese is left. Mix together any sauce remaining in the shallow dish with the reserved enchilada sauce. Pour evenly over the enchiladas in the pan. Sprinkle with remaining cheddar cheese. Bake for 20-25 minutes until sauce is bubbling on the edges.
To serve, place two enchiladas on a plate, sprinkle with 1/4 cup shredded lettuce and place four 1/2 slices of tomato across the top and serve. |

Notes: This is the way Grandma always made her "Americanized" enchiladas. They are less expensive and quicker to make than our Dad's enchiladas, so when my kids were young I made these quite a bit. Later, my boys ate "enchiladas" made by Jim's cousin-in-law, Bob Dana, who uses flour tortillas and they preferred them to the ones I always made with corn, so I started making them for them. I always tell Bob they are not enchiladas if they are made with flour tortillas! You will find Bob's enchilada recipe in this cookbook, try it if you are not a purist.
