1 1/2 c. AP flour
1 c. granulated sugar
1 tsp. baking soda
1/2 tsp. white vinegar
5 tbsp. canola oil
1 tsp. vanilla extract
1 tsp. almond extract
1 c. water

Directions:
Directions:
Mix all dry ingredients in large bowl. Once fully mixed, make 3 depressions in the mix, 2 small, one large. In the first small depression, add the vanilla and almond extracts. In the second, add the vinegar. In the larger depression, add the canola oil. Pour the water over all ingredients and whisk together. Line a dozen cupcake tins with liners and divide batter evenly between all 12. Bake at 350ºF for 18 minutes, until a toothpick comes out clean.
 

Vanilla Almond Buttercream

6 tbsp. softened butter
3 c. powdered sugar
3/4 tsp. vanilla extract
3/4 tsp, almond extract
3-5 tbsp. almond milk

Directions:
Directions:
Add softened butter to stand mixer with whisk attachment. Mix at medium high speed for 3 minutes, until butter is light and fluffy. Add 3 tbsp. of almond milk to begin and extracts, then mix for 1 additional minute. Slowly add powdered sugar on low speed. Add additional milk if needed. Whip on high speed for 3 minutes.
