2 small English cucumbers (about 1 1/2 pounds)
1 Tablespoon kosher salt divided
2 Tablespoons fresh lime juice (about one lime)
1 Tablespoon finely diced shallot
2 teaspoons cane sugar
1/2 teaspoon grated ginger
1/2 teaspoon toasted sesame oil
1/8 tsp crushed red pepper or 1 red Fresno chile seeded and thinly sliced
1/2 cup packed fresh mint sliced thin

Directions:

Cut one cucumber into 1/2 inch pieces; thinly slice remaining cucumber.

Toss cucumber in Tbsp salt. Transfer cucumber to colander and let drain 10 minutes.
Rinse excess salt off and pat dry with paper towels. This step is very important!!

Add lime juice, shallot, sugar, ginger, toasted sesame oil, red pepper and a dash of salt. Whisk to combine. Add cukes and toss. Let stand 5 minutes. Toss in mint.
