1440 ml flour (I use all purpose but you can use whatever you like. Some flours take more or less water so you can look up a conversion table)

7.5 ml dry yeast

1 tbsp. sugar

2 tbsp. Olive Oil

1 tbsp. Salt

600 ml.Warm Water

Directions:
Mix the warm water, yeast and sugar in a large mixing bowl. Let is stand for 10 minutes until the mixture is cloudy.

Stir in Oil, Salt, and 1200 ml. flour until well mixed.

Add remaining flour 100 ml. at a time until mixture is sticky. Turn onto bread board floured and knead for 8 minutes or until it can be formed into a ball adding flour as you go to the board.

take some oil and lightly coat a bowl about 2.5 times bigger than the dough ball. Put dough in bowl, cover with a kitchen towel, put in a warm place and allow to rise to 2X the original size.(about 1 hour)

Take dough and place it back on floured bread board. Make it into a thick snake and cut into pieces (I cut mine into 5 pieces because we like thin pizza dough but you can do whatever size you want.)

I froze the remaining dough and used it later. I found that the thawed dough worked better than fresh.

Bake pizza in a 220c oven for about 15 minutes. check after 10 minutes because ovens differ.

Notes: I used a stand mixer with a dough hook instead of hand mixing and kneading. Worked great and that is how we used to do it in the pizza parlour where I worked when I was going to college. I also use sliced tomatoes instead of sauce. I slice them real thin and place them on paper towels to absorb some of the moisture. Anything that you put on your pizza that is moist will make the center gooey so just sayin'.
