1/3 cup peanut butter
1/3 cup almond butter
2 T. coconut oil
1/3 cup honey
1 large egg
1 tsp. vanilla
1 cup sliced almonds, toasted and cooled
1/3 cup flax seed meal
2/3 cup coconut
3 cups quick oats
1/4 cup brown sugar
3/4 tsp. salt
2/3 cup mini chocolate chips

Preheat oven to 350º. Spray a 8"x8" baking pan and line with parchment paper with sides overhanging. Set aside.

In a small bowl melt the coconut oil and the nut butters together. Microwave for about 1 minute. Stir till combined and smooth. In a large bowl beat the melted butters, honey, egg and vanilla until completely combined. Add in the oats, brown sugar, salt, almonds, flax seed meal and coconut. Mix well. Slowly stir in the chocolate chips.

Transfer to the prepared pan and press down well till the surface is flat and even. Bake about 25-30 minutes till lightly golden on the edges.

Cut when completely cooled. Makes about 16 granola bars.
