5 cups cheddar cheese -- sharp cheddar or white cheddar or mix
8 to 10 ounce cream cheese
1/2 cup mayonnaise
1 Tablespoon half and half
1/2 Tablespoon garlic powder
1/2 Tablespoon onion powder
1/2 teaspoon celery seeds
4 oz. jar of diced pimiento, drained
2 dashes Sirrachi sauce
1/2 cup pickled jalapenos, some juice is fine and tasty

Directions:
Directions:
Using a food processor, shred cheeses in a mixing bowl. Add cream cheese with a flat blade, add mayo, half and half, powders, celery seeds and process 20 seconds until mixed but not smooth.

Add jalepenos, 3/4 pimentos, and 1/2 of shredded cheese. Process until smooth another 20 seconds, Transfer to mixing bowl with remainder of shredded cheese and pimento. With mixer on low, thoroughly mix. Refrigerate. Best made a day ahead. Keeps a long time in refrigerator.
