½ lb bacon, diced
1 medium sweet onion, chopped
6 large eggs, lightly beaten
4 cups frozen shredded hash brown potatoes, thawed
2 cups shredded cheddar cheese
1½ cups cottage cheese

Directions:
Directions:
* Preheat oven to 350º.
* In large skillet, cook bacon and onion over medium heat until bacon is crisp; drain.
* Mix remaining ingredients in large bowl; add bacon mixture. Pour into greased 13x9 baking dish.
* Bake uncovered, 35-40 mins until knife inserted comes out clean. Let stand 10 mins before cutting.
