Beat:
3 eggs

Stir in:
1 C bean sprouts, drained
½ C chopped cooked pork
2 TAB chopped onion
1 TAB soy sauce


Sauce:
1 Tsp cornstarch
1 Tsp sugar
1 Tsp vinegar
2½ TAB soy sauce
½ C water

Mix all ingredients in small saucepan. Cook, stirring constantly until mix thickens & boils.

Boil and stir 1 minute.

Heat:
2 Tab oil in large skillet

Pour ¼ C mix into skillet,with broad spatule, push cooked egg mix over meat to form patty.

When patties are set, turn to brown other side.

Serve hot with sauce.
