3-4 lb. boneless chuck roast
2 T. vegetable oil
1 packet Lipton onion soup mix
1 can cream of mushroom soup

Directions:
Directions:
Put oil in iron skillet and heat to medium hot. Brown roast on all sides, then place roast in crockpot. Put about 1/2 c. water in skillet and scrape up any pieces of meat left from browning process. Put this liquid in the crockpot. Put the dry soup mix on top of meat, and spread the mushroom soup on top of that. Cover and cook on high for 4-6 hours. This will make its own gravy, so when meat is done you just take it out of crockpot, transfer the gravy to a saucepan and thicken it with cornstarch and water if needed.

We always have rice with our pot roast but if you want potatoes and carrots with yours, the veggies can be added to crockpot too.
