12 ounces farfalle or cavatelli pasta
3 tbsp extra virgin olive oil
2 pounds of chopped tomatoes
5 ounces chopped mozzarella cheese
½ cup chopped fresh basil
¼ cup chopped red onion
3 tbsp red wine vinegar
salt and pepper to taste

Directions:
Directions:
* Cook pasta until al dente, drain and rinse, and combine in a bowl with 1 tbsp olive oil
* Gently mix remaining ingredients in a separate bowl
* Toss pasta and tomato mixture together and serve with grated Romano cheese
