2 15 oz. cans whole kernel corn, drained
1/2 cup mayonnaise
1 cup cream cheese (room temp.)
2 pickled jalapenos finely minced
1 cup grated cheddar cheese
2 cups grated mozzarella cheese (divided)
1/2 cup freshly grated parmesan cheese
1/2 tsp. salt
1/4 tsp. black pepper
10 slices cooked bacon (crumbled)
2 green onions (sliced)
additional sliced green onions for garnish

Preheat oven to 350 degrees. Grease a 9 inch cast iron skillet or similar sized casserole dish. In a large bowl, combine corn, mayonnaise, cream cheese, jalapenos, cheddar cheese, 1.5 cups mozzarella, and parmesan cheese, salt and pepper. Stir until fully combined. Add bacon and green onions. Stir until combined. Spread the mixture in the skillet or casserole dish, topping with remaining mozzarella. Bake for 30 minutes or until bubbly. Turn on broiler and bake for 1-2 more minutes until golden brown on top. Serve the dip warm from the oven with crackers, Fritos, or tortilla chips.
