Chicken leg quarters
Your favorite chicken seasoning
1 stick butter, melted
16 oz. bottle white vinegar
¼ cup ground black pepper

Directions:

Preheat your grill to 200º - 225º
Season the chicken on both sides with your favorite seasoning.
Melt butter and combine with vinegar and pepper. Set aside for basting.
Lay chicken pieces on the grill and close the lid.
DO NOT OPEN for 30 minutes.
At the 30 minute mark, turn chicken pieces over and baste with butter mixture.
Cook for 3 hours (really!) turning and basting every 30 minutes.

When we traveled to Texas for Hayden Family reunions, the best part was watching my uncles barbecue. The big three, Uncle Benny, Uncle Stape and Uncle Tony, would guard the barbecue, faithfully, with beers in hand (usually Pearl, Schlitz and Jax). I asked them to teach me how to barbecue. They REALLY knew what they were doing!

I made this chicken to serve at Cousin Jimmy's daughter's wedding. I made 250 leg quarters to serve 125 guests.
