1 C pineapple juice
1/3 C soy sauce
1/2 C ketchup
1 Tbsp rice vinegar
1/3 C brown sugar
2 cloves garlic finely chopped or grated
1 Tbsp ginger root
1-2 Tbsp Sriracha sauce
2 lb boneless skinless chicken thighs or breasts
1 can (16oz) crushed or diced pineapple drained, juice reserved

Directions:
Directions:
Mix first 8 ingredients in slow cooker.
Add chicken and crushed pineapple.
Cover and cook on low heat 6-8 hours or 4-6 hours on high.
Once chicken is cooked through and sauce is thickened, remove chicken, shred it and return it to slow cooker.
Turn heat to high and cook uncovered 25-30 minutes. If sauce gets too thick, add reserved pineapple juice.

Serve warm over bed of rice.
