2 cups instant potatoes
3 cups water
1 cup milk
2 T. minced onion
6-8 T. Butter
4 slices American cheese
1/2 cup shredded cheddar cheese

Directions:
Directions:
Heat water, milk, and minced onion. Remove from heat and stir in instant potatoes and 2 T. butter. Let stand 1 minute. Mix with fork. Line an 8x8 inch pan with 1/2 of potatoes top with sliced cheese and dot with half of the butter. Put the remaining potatoes over
the top of slice cheese and sprinkle with cheddar cheese dot with remaining butter.
Bake 350 degrees for 15-20 minutes or until cheese is melted.

Mom has made these potatoes for years. She has had many requests to bring them to pitch-ins. Midge and April will even eat them for breakfast.
