1/2 C Mayonnaise
1/4 C Grated Parmesan Cheese (plus 1/3 C shaved Parmesan, for serving)
2 Cloves Garlic (finely chopped)
1 Tsp. Dijon Mustard
1Tsp. Fresh Lemon Juice (from one lemon)
1 Lb. Brussels Sprouts (thinly sliced)
2 C Shredded Rotisserie Chicken breast (from 1 chicken)
1 5 oz. Pkg. Baby Kale
Salt & Pepper to taste
Croutons

Directions:
Directions:
Whisk mayonnaise, 1/2 cup water, grated cheese, garlic, mustard, lemon juice, and remaining 1/4 teaspoon each salt and pepper in a large bowl. Add brussels sprouts, chicken, and kale, Thomas gently to coat.

Transfer salad to a platter. Top with croutons and shaved cheese.
