- 400g (about 3 small) russet potatoes, peeled, washed, and cut into bite sized pieces
- 2tbsp olive oil
- Spices: oregano, parsley, garlic powder, onion powder, salt, pepper
- 1tbsp baking soda

1 | Preheat oven to 425F

2 | Put potatoes in a pot, cover with water, add baking soda and salt, stir well, and bring to a boil.

3 | When potatoes are near fork tender, drain and let cool

4 | Place cooled potatoes in a bowl with olive oil and spices, and toss to coat. Bake for 25-35 minutes, until brown and crispy. Finish off with broiler on high to make sure they’re crispy

The baking soda is the magic ingredient here. Boiling in the baking soda coats the potatoes in a mashed-potato-like later that gives the potatoes their perfect crunch. When coating in oil/spices, don’t be afraid to rough them up a little. Those roughed edges are what crisp so nicely.
