For Bars:

4 eggs, beaten
1-2/3 cup granulated sugar
1 cup vegetable oil
1 - 16 oz can pumpkin puree (not pie filling)
2 cups flour
2 tsp baking powder
2 tsp ground cinnamon
1 tsp salt

For icing:

8 ounces cream cheese, at room temperature
1/2 cup butter, softened
1 tsp vanilla extract
4 cups powdered sugar

Preheat oven to 350º

Stir together flour, baking powder, cinnamon and salt, set aside. Combine beaten eggs, sugar, oil and pumpkin in a large bowl, stir in flour mixture. Spray a 9" x 13" pan with cooking spray. Pour batter into the prepared pan., spread evenly. Bake for 25 to 30 minutes until center springs back when lightly touched. Do not over bake. Let cool in pan.

For icing, beat together cream cheese and butter until smooth and fluffy. Add vanilla, stir until incorporated. Add powdered sugar, beat until smooth. Spread over baked layer. Chill in refrigerator for 30 minutes before cutting into bars. Store bars in refrigerator. These bars freeze nicely.

On a visit with my husband Jim's extended family in Omaha, Nebraska, his cousin Bob Wood's wife Judy brought these to a potluck. Seeing how our boys loved them, Judy mailed me the recipe after we had returned home.
