1 box french vanilla cake mix, dry mix only
1/2 C vegetable oil
2 eggs
Green food coloring gel
Powdered sugar (for dusting)
large heart shaped candies (I found them on Amazon)
Peppermint extract (Optional)

Directions:
Directions:
Preheat oven to 350º
In the bowl of your stand mixer, cream together cake mix, food coloring, oil, eggs and a few drops of peppermint extract if desired. Drop by Tablespoon into powdered sugar and roll into balls. If the dough is too sticky, you can chill it for 10-15 minutes before you roll into balls. Place on baking sheet and press one large candy heart into the center. Bake for 8-10 minutes until just set. Let cool 3-4 minutes on pan before removing to wire rack.

Take the cookies out near the 10 minute mark even if they look like they could use a few more minutes. Because they are cake mix cookies, they will firm up after cooling on the pan for a few minutes. Don't let them turn Brown.

The peppermint extract makes them more festive, but Wes didn't care for the flavoring...AND, if you put these in the same container with other cookies, they will all taste minty!
