1 can cream of chicken soup
2 chicken thighs (or breasts)
1/4 c. finely diced onion
1/4 c. finely diced celery
5 c. chicken broth
1 c. coarsely shredded carrots (like matchsticks)
1 c. sliced mushrooms
2/3 c. uncooked wild rice, or mixed rice
1/2 t. thyme
1/4 t. pepper
1-2 shakes garlic powder
1 T. dried parsley
1 c. shredded spinach

Directions:
Directions:
Fill large stockpot with water, onion, celery, chicken, and salt/pepper to taste. Cook until chicken is done. Remove chicken and cool. Save water for chicken broth (skim excess fat or gunk off top). If needed, add canned chicken broth or water and chicken bouillon cubes to make 5 cups. Cut up cooked chicken. Cook carrots and chicken in broth on low until carrots are tender. Add mushrooms, uncooked rice, and seasonings. Bring to a boil, then simmer for 20 min. or until rice is done. Stir in cream of chicken soup and heat until smooth. Add spinach and cook a few minutes until spinach is cooked. If soup looks too thick, add more broth or water.
