3 chicken breasts
1 tbsp olive oil
1 onion
1 bell pepper, seeded and chopped
1-2 jalapenos, seeded and diced
4 garlic cloves, minced
2 tsp salt
1 tbsp cumin
1 tsp coriander
4 cups chicken broth
2- 7oz green chilis
3 tbsp thick canned coconut milk- unsweetened
3 tbsp arrowroot powder
chopped green onions/cilantro for garnish

* Chop chicken and veggies. In a large pot, put oil, onions, peppers, jalapenos, and garlic. Sauté for 5 minutes, then add chicken, salt and spices. Sauté another 5-8 minutes until chicken is cooked through. * Add broth, green chilies, and coconut milk. Whisk in arrowroot powder and bring to a boil. Lower heat and simmer for 20 minutes.
* The recipe calls to mash the chicken to shred it but I just leave it and its great!
* Serve with green onions and cilantro if you want!
