2 tsp butter
1 lb ground turkey
Sea salt and pepper, to taste
1 cup chopped red bell pepper
1 cup chopped onion
⅔ cup chopped celery
1 garlic clove, minced
2 tsp chili powder
1 tsp paprika
1 tsp ground cumin
⅛ tsp cayenne pepper
2 cups chopped tomatoes
½ cup chicken broth
1 bay leaf

* Heat 1 tsp butter in 3-quart saucepan over high heat. Add turkey and season with sea salt and black pepper. Break up turkey and cook 4–5 mins until browned. Remove to a bowl and cover to keep warm.
* Heat 1 tsp butter in saucepan on low; cook pepper, onion, celery, and garlic for 3–5 mins or until vegetables begin to soften. Add chili powder, paprika, cumin, cayenne and cook, stirring for 1 min.
* Increase heat to medium and add tomatoes, chicken broth, bay leaf. Bring to a boil over high heat. Reduce to medium-low and simmer uncovered for 15 mins. Add browned turkey; simmer 5 mins more.
* Remove and discard bay leaf before serving.
