2 medium or large eggs
1/4 C grated cheese
Salt and pepper to taste

Crack eggs into small bowl and whisk together.

Heat small fry pan coated with oil in medium heat.

Add eggs.
When eggs have solidified, use spatula to flip to other side.
Add cheese.

Carefully fold egg in half to cover cheese.

Serve on plate with toast or biscuits.

A little fancier than scrambled eggs but not much harder to prepare. Any cheese will work A nice dish prepared in about 10 minutes or less from star to finish.
