1 lb of any cut of beef in 1/2 inch pieces
6 medium potatoes in 1/4 - 1/2 inch pieces
1 medium onion; sliced
1 C carrots; sliced thin
other vegetables (peas, beans, etc.) to taste
2 C beef broth
Salt and pepper to taste
2 Tbsp corn oil
1/4 C flour

Directions:
Directions:
Heat the oil in a fry pan.
Toss the beef in the flour to coat.
Add the beef to the fry pan and cook until brown on all sides.

Add all ingredients to a slow cooker.

Add additional broth or water to cover ingredients.

Set slow cooker for 6-8 hours.

Serve with crusty bread or biscuits in bowls

Love this recipe as almost any veggies can be added and it is even tastier as leftovers. This is easy but delicious!

If there is no slow cooker, bring to a boil in a large pot and then cook over medium heat for 4-6 hours or until potatoes are tender.
