STEP 1

¼ Cup Dried cherries
¼ Cup Dried cranberries
1½ Cups Red wine
2 Bay leaves
1 Tsp Peppercorns 2 Tbsp Sugar
1 Sprig thyme
1 Allspice berry
½ Tsp Salt

3-4 Cups Oven dried bread cubes
2 Cups Cooked Farro
1 Cup Toasted nuts, chopped

STEP 3

8 Oz Bacon, diced
1 Cup Onion, diced
1 Cup Celery, diced
1 Cup Apple, diced
4 Cloves, garlic, diced
1 Pepper, diced
1 Cup Carrot, diced
½ Cup Dried mushrooms, hydrated in hot stock, chopped

1 Tsp Ground allspice
1 Tsp Ground thyme
1 Tsp Ground Bay leaves
2 Tsp Salt
1 Tsp Pepper

2 Eggs
1 Cup Whipping cream
1-2 Cups Stock

STEP 1

In a small saucepan bring all step 1 ingredients except the dried fruit, to a boil. Let cool, then add the dry fruit.

STEP 2

Combine step 2 ingredients.

STEP 3

Brown bacon. Remove from pan and add butter and vegetables. Cook for 10-15 minutes. Add herbs and spices, mix well and cool.

STEP 4

In a large bowl, mix together all ingredients, using stock and cream to moisten. Check for salt and pepper.
Stuff into turkey and roast.
