1 12-15 Lb Turkey

HERB GRAVY

1 Cup half and half
¼ Cup Fennel seeds
3 Celery Stalks, chopped
1 Onion, chopped
10 Thyme sprigs OR
2 Tsp Whole dried thyme
10 Tarragon sprigs
5 Bay leaves
1 Tsp Peppercorns
2 Cloves Garlic, smashed 4 Cups Stock, warmed
3 Tbsp Butter
¼ Cup Flour
2 Tbsp Parsley, chopped

STEP 1

In a small saucepan, combine the half and half, fennel seeds, celery, onion, thyme, tarragon, bay leaves, peppercorns, and garlic. Bring to a simmer and cook for 2 minutes. Remove from heat and let steep for 1 hour. Strain mixture. Discard solids. Refrigerate.

STEP 2

While turkey is cooking, melt butter in a heavy pot. When foam subsides, add flour. Whisk. Add stock and whisk til smooth. Add the herb mixture and whisk until smooth, thick, and bubbly. Add parsley and keep warm.
