1 1/2 lbs of ground beef
1 large onion, diced
1 Tablespoon of canola oil
salt to taste
pepper to taste
1 teaspoon Italian Seasoning or to taste
2 Chopped garlic cloves or to taste
1/2 teaspoon Smoked paprika or to taste
2 cans of Rotel
1 can Mexican Stewed Tomatoes
16 ounces spaghetti or favorite pasta
1/2 cup Mozzarella Cheese
Favorite spaghetti sauce

Directions:
Preheat oven to 400 degrees. Cook the onions in the oil with a pinch of salt. Add the beef and cook it, breaking it up as you do. Add another pinch of salt along with the dry seasonings. Add the tomatoes and bring to a simmer, then reduce the heat to low and cook for 45 minutes. Cook the pasta in boiling water, until it is half done. Stir the macaroni into the meat mixture. Place meat mixture in a 9x13 pan. Cover the top of the casserole with the cheese. Cover with foil and bake in a 400 degree oven for 30 minutes or until the cheese is melted.

Serve with garlic bread and a salad. Serves 8-10 people.
