2 c sugar
1/3 c honey
1/3 c apple cider vinegar
3 lg beets, peeled and roughly chopped
1 oz fresh lime juice, plus lie wedge for garnish
1 oz mezcal
2 oz seltzer
1 oz ginger beer

Directions:
1. Make the beet syrup; Bring 1 c water, the sugar, honey, and vinegar to a simmer in a small sauce pan. Simmer until the sugar dissolves, about 10 minutes. Add the beets and simmer until softened, about 20 minutes. Strain through a fine-mesh sleeve and let cool.
2. For each cocktail; Combine 3/4 oz beet syrup, the lime juice and mezcal in a shaker; shake well. Straian into an ice-filled glass. Add the seltzer and ginger beer.
Garnish with a line wedge.
