10 medium tomatoes
5 cloves garlic finely chopped
1 cup chopped parsley
½ cup fine dry breadcrumbs
½ cup grated parmesan
½ cup olive oil
salt and paper
optional - finely chopped spinach or kale

Directions:
Directions:
* Preheat oven to 350º
* Cut tomatoes in half, remove seeds with your fingers, sprinkle with a little salt and place upside down on a baking rack for 20 minutes.
* Mix garlic, parsley, breadcrumbs, parmesan; slowly work in oil. Season with salt and pepper.
* Using a small spoon push filling into tomato halves. Press down with your fingers to really stuff them.
* Place in greased dish and bake until tender, about 35 minutes.
