Bottom Layer ;
1 box yellow cake mix
1 egg
1 stick of butter (melted)
1 cup pecans

Top Layer:
1 - 8 oz cream cheese
3 eggs
1 box confectioner’s sugar - (sift)

Directions:

Bottom Layer: Mix all ingredients together and press in pan.
Top Layer: Beat and pour over bottom mixture. Bake 30 - 40 min. at 350 degrees.

Nancy Akins Salmon was the baby in the family. She was also, like the rest of her siblings, an unbelievable cook. She had one recipe that she was particularly proud of that she kept under lock and key so when you had a chance to sample it you really felt special!!!. She worked hard, she loved unconditionally (especially her husband, Billy Salmon, her children Steve and Lori, grandchildren and grandchildren) and was loved just as much in return. For several years she was a Walmart greeter. We of course are prejudiced but we think, no we are sure, she was the best greeter ever. She had a beautiful smile and always wore it....even when dealing with her not so nice customers that came in to Walmart. But above all else, she loved her Jesus and her church and daily she talked the talk and walked the walk.
