Mushroom stroganoff serves 2

4 packs chestnut mushrooms (, thinly sliced) roughly 600g
25g butter
2 banana shallots , thinly sliced
2 tbsp Dijon mustard
400ml veg stock
1 tbsp vegetable oil
4 heaped tbsp sour cream or crème fraiche
1 tbsp brandy (optional)
smoked paprika
finely chopped parsley, to serve
salt and freshly ground black pepper

Heat the butter in a large frying pan.

Add the onions and sauté for 2 minutes then add the brandy and flambé

Then add the mushrooms, cook until tender

Add the mustard and stir it into the vegetables, coating thoroughly.

Pour over the stock and leave to simmer until the liquid has reduced by about half.

Stir in the crème fraiche or sour cream , add a sprinkle of smoked paprika

Season to taste, sprinkle over the parsley and serve.
