6.oz.175g. Dates.
10.fl.oz.300mls.Boiling Water.
1.tspn. Bicarbonate of Soda.
2.oz.50g. Butter.
6.oz.175g. Caster Sugar.
6.oz.175. Self raising Flour.
1.tspn. Vanilla Essence.
2.oz.50g. Chopped Walnuts.

Icing.
4.fl.oz.100mls Double Cream.
3.oz.75g.Light Brown Sugar.
2.tbsp. Golden Syrup.
1.oz.25g. Butter.

Directions:
Directions:
Place the dates in the boiling water and simmer for 10mins.
Add the bicarbonate of soda this will cause the mixture to bubble up so be careful.
Cream the butter and sugar.
Add the eggs with the vanilla essence.
Stir in dates,walnuts,flour and stir well.
Place in a lined and greased 8"inch.20cm tin.
Cook for 35-40mins.

Fudge Icing.
Slowly warm all ingredients and cook for a few minutes until the sauce begins to thicken.
Put in the fridge to cool until it has thickened enough to spread.
When ready spread over the top of the cake.
Can be decorated with small fudge pieces.
