4 c. corn kernels, canned or fresh (about 5 large ears)
1 can (4.5 oz) Old El Paso mild green chiles
1/3 c. plain Greek yogurt
1/4 c. crumbled cotija cheese
1/4 c. chopped fresh cilantro leaves
1/4 c. diced red bell peppers
2 T. mayonnaise made with olive oil
2 green onions, thinly sliced
1 lime, juiced
1/2 tsp. chili powder

Optional: If using fresh corn, may slightly char corn in grill pan prior to slicing it off the cob. Mix all ingredients together in a mixing bowl until well combined. Taste and season with salt and pepper as desired. Serve with chips.

I love simple recipes where all you have to do is pour and mix! However, to make it a meal, turn it into a salad by chopping up some romaine lettuce and grilled chicken!
